Savory Cheddar & Sweetcorn Muffins

Ingredients

1 cup flour 2 teaspoons baking powder Pinch of salt ¼ teaspoon cayenne pepper 1 tablespoon sugar 2 tablespoons cold butter, cubed 1 handful fresh coriander or parsley, chopped ⅓ cup sweetcorn ½ cup grated cheddar cheese ½ cup milk 1 egg

Instructions

  1. Preheat your oven to 170°C and lightly grease or line a muffin tray.
  2. In a large mixing bowl, combine the flour, baking powder, salt, cayenne pepper, and sugar.
  3. Add the cold butter and rub it into the dry ingredients using your fingertips until the mixture resembles fine crumbs.
  4. Stir in the chopped herbs, sweetcorn, and grated cheddar cheese.
  5. In a separate bowl, whisk together the milk and egg.
  6. Pour the wet ingredients into the dry mixture and gently mix until just combined. The batter should be thick—avoid overmixing.
  7. Spoon the mixture evenly into the muffin tray.
  8. Bake for 20–25 minutes, or until the muffins have risen and are cooked through. Insert a knife or fork into the center—if it comes out clean, they are ready.
  9. The tops should remain light in color rather than deeply browned, to keep the muffins soft and moist.
